Quinoa Salad

Prep Time:

Cooking Time:

10 minutes


Ingredients:

  • 1 cup quinoa

Dressing:

  1. ¼ tsp cumin

  2. 2 tbsp olive oil

  3. 5 tbsp apple cider vinegar

  4. 2 tbsp lemon or lime juice

  5. 1 tsp dry oregano (fresh when in season)

  6. 1 tsp dry basil (fresh when in season)

Vegetables:

1 Tomato

1/2 English cucumber

1 Red bell pepper

4-5 Sprigs of Parsley

4-5 Sprigs of Cilantro

1/2 teaspoon of minced garlic

2-3 Stems green onions


Directions:

  • Rinse quinoa, Place in a saucepan, add 1¼ cup water and cook on medium low.

  • Once cooled add all dressing ingredients.

  • Chop and add all vegetable ingredients.

  • Serve and enjoy!


Notes

Add (optional)

½ cup edamame

½ cup black small beans

½ cup corn

½ cup chopped Kalamata olives
