Carrot Banana Bread

Ingredients:
1 banana
2 cups Almond flour (or any other)
3/4 cup monk sugar (or coconut)
1/2 cup dairy Free yogurt
1 1/2 cup grated and squeezed carrots
1/2 cup walnuts
1/2 cup raisins
1/3 cup coconut oil
2 tsp vanilla extract
2 tsp baking powder
1 tsp baking soda
1/2 tsp of each: salt, nutmeg, cloves, cinnamon, or 1 1/2 tsp pumpkin spice.
Directions:
Preheat oven on 350 F
Combine: flour, sugar, spices, baking soda, baking powder, and salt
Add: yogurt, banana purée, vanilla, coconut oil and mix gently with a spatula until all smooth
Add in walnuts and mix
Brush the baking pan with coconut or olive oil
Gently pour the batter in the pan and bake for 50-55 minutes, or until toothpick comes out dry
Let it cool then slice and serve! 😋
Notes
Add more spices. I normally do
If making cupcakes, they cook faster than the loaf
Each recipe yields to small 12 cupcakes, or one loaf
