Carrot Banana Bread

Carrot Banana Muffins

Vegan, Gluten Free , Dairy & Egg Free

Ingredients:

  • 1 banana

  • 2 cups Almond flour (or any other)

  • 3/4 cup monk sugar (or coconut)

  • 1/2 cup dairy Free yogurt

  • 1 1/2 cup grated and squeezed carrots 

  • 1/2 cup walnuts

  • 1/2 cup raisins 

  • 1/3 cup coconut oil

  • 2 tsp vanilla extract

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp of each: salt, nutmeg, cloves, cinnamon, or 1 1/2 tsp pumpkin spice.


Directions:

  • Preheat oven on 350 F

  • Combine: flour, sugar, spices, baking soda, baking powder, and salt

  • Add: yogurt, banana purée, vanilla, coconut oil and mix gently with a spatula until all smooth

  • Add in walnuts and mix 

  • Brush the baking pan with coconut or olive oil

  • Gently pour the batter in the pan and bake for 50-55 minutes, or until toothpick comes out dry

  • Let it cool then slice and serve! 😋


Notes

  • Add more spices. I normally do 

  • If making cupcakes, they cook faster than the loaf

  • Each recipe yields to small 12 cupcakes, or one loaf
