Divine Chocolate Coconut Balls

A Vegan Option!

Prep time: ½ hour

Yields: 14-15 balls

 Ingredients:

  • ½ cup almonds soaked for at least 4 hours or longer (germinated)

  • ½ cup walnuts soaked for least 4 hours or longer (germinated)

  • 6 organic dates soaked in hot water for a few minutes to soften

  • 3 tbsp. raw cacao powder

  • 1 tbsp. raw coconut oil

  • 3 tbsp. shredded coconut (for rolling balls)

 Instructions:

·      Place all ingredients in a food processor. Depending on the speed of your processor, stop blending when you have noticed that all ingredients are mixed. There will be some chunks of nuts, to give it a crunch.

·      Use a small spoon to start making bite size balls. You might want to put some oil on your hands so that mixture won’t stick to your hands.

·      Roll each ball in the shredded coconut.

·      Place in the refrigerator for 20 minutes to set.

·      You may also freeze them to use later.
